Shane Llewelyn-Jones started beekeeping with one hive in the garden aged 12, much to my parents’ dismay! Now 30 years later he runs the Bee Welsh Honey, based in mid Wales, Builth Wells in the green heart of Mid Wales. Great Taste winner 2020, Spring Honey from Hives in Builth Wells. This is a clear, clean dark honey. There is a caramel note on the nose with a waft of herbs and flowers. This translates well to the palate and provides a very positive deep and fairly complex flavor. The sweet caramel of the honey binds well with the floral notes that finish in harmony. This is bouncy, smooth and velvety on the palate. There is a delightful balance of sweetness with hints of acidity. It's mellow, floral and with the taste of pollen and hive. It has a long finish - longer than we expected it to be. It surprised us. A bright honey full of the joys of spring. Category - Seasonal.
